At least 2cm in thickness, the tomahawk is carved from the beef rib, with a signature, extra-long bone left whole and attached. The meat and fats are trimmed off the bone, and resembles the handle of a Tomahawk axe - wherefrom its name is derived. Tender in texture, and rich in flavour.
